Time is an illusion. Lunchtime doubly so.
New technology is useful but it's inefficient and ugly it knows it'll be obsolete by lunchtime tomorrow so it has no incentive to be anything else.
Latin food suffers like Chinese. You can do marginal Chinese and be successful. You can do crappy Mexican and be packed.
